Corn Casserole

I made this for our Thanksgiving dinner we had at work.  It’s easy and cheap to make.  They ate every bit of it.

Ingredients:
1 (15 ounce) can cream-style corn
1 (11 ounce) can whole kernel style corn
2 eggs
1 cup sour cream
1 (8.5 ounce) package jiffy corn bread mix
1/2 cup butter, melted
1 cup shredded Cheddar cheese
Directions:
1.Preheat oven to 350 degrees F (175 degrees C). Grease a 8 x12 inch casserole dish.
2.In a mixing bowl, combine cream corn, whole kernel corn, eggs, sour cream, muffin mix, and butter. Pour into prepared casserole dish.
3.Bake in a preheated oven for 30 minutes or until lightly brown.
4.Remove from the oven and sprinkle cheese over the top. Return to the oven for 15 minutes or until the center is firm.

Acckkkkk! I was just going to comment on the Chicago Italian Beef and now I see this. YUM to both. We are trying them both. Chicago Italian Beef for our early family Christmas celebration where we do snack-ie goodies and the Corn Casserole for Thanksgiving! Thank you so much!

Hi, We live in N.W. Indiana, about a 45 minute drive to Chicago. Your beef sandwich recipe is similar to the one I make. I add a can of pizza sauce and minced garlic. I top the sandwich with mozzarella cheese then toast under the broiler. Can't wait to make the corn casserole
